Can I force bookings to happen at certain times of day?

It's not possible to set your booking page to force bookings to happen in a certain order, or in a specific sequence. 

However, you can use the Calendar Managed Availability feature to make sure bookings start at the top of the hour, for example, so you have set start and end times no matter how small your grid displays.
